I just love festive holidays, especially Valentine’s Day because it’s so pink and girly! This recipe is my go-to whenever I make sugar cookies because they are always such a hit with friends and neighbors, and you can use any type of cookie cutters you want to make them fun. Perfect for every holiday! I figured I’d share this recipe again for Valentine’s Day so you could be inspired to make some festive cookies for your family!

Growing up we made cookies for almost every holiday, so I wanted to make this a fun activity to enjoy with my daughter. She’s almost two, but had so much fun decorating the tops of the cookies with sprinkles and, of course, eating them! These cookies are 100% grain-free, gluten-free and have the most delicious buttery, sweet taste. They also are really easy to make!

Ingredients You’ll Need

  • Almond flour
  • Coconut flour
  • Baking soda
  • Grass-fed butter
  • Coconut oil
  • Egg
  • Sugar + baking Stevia
  • Vanilla extract

When baking these sugar cookies, I like to use a combination of regular sugar plus baking Stevia because the regular sugar helps to achieve that perfect browning and rising that only sugar can provide when baking. Then I like to add the baking Stevia because it’s a great way to lighten these cookies up while still maintaining that same great “sugar cookie” taste! If you don’t have any baking Stevia, simply replace with more sugar.

How to Make Grain-Free Sugar Cookies

To make these, you’ll want to use a stand mixer or hand mixer, and the first step is creaming together the butter, sugars, coconut oil, egg and vanilla. Then you’ll slowly add your flours and mix until all combined. Form the dough into a ball, wrap it with plastic wrap and place the dough in the fridge for at least an hour. You could also just make the dough the night before and leave it there overnight. I actually find that chilling the dough overnight works best because the cookies seem to hold their shape a bit better and the dough is easier to work with, but either way you will still get delicious cookies!

Once the dough has chilled, it’s time to roll it out and cut out your cookies! Roll the dough out on parchment paper until it’s about 1/4 of an inch thick. Use a cookie cutter and cut the dough into desired shapes (or an assortment of different shapes) and place the cookies on a baking sheet. Then bake in the oven for about 10 to 13 minutes until they are nice and golden. Make sure to let them cool completely before decorating!

How to Decorate Sugar Cookies

Chocolate-Dipped Cookies

Since I had some leftover white chocolate chips from my strawberry banana donuts, I decided to just melt the chocolate, add a bit of pink food coloring and dip these cookies into the chocolate. To melt the chocolate chips, just add them to a microwavable-safe bowl along with a tablespoon of coconut oil and slowly microwave in 15 to 30 second intervals (stirring each time) until the chocolate is melted and you have that perfect consistency. The added coconut oil really makes it easier to dip the cookies as it thins out the chocolate and makes it nice and glossy! Then after you dip the cookies, immediately place them on a wire rack and decorate with sprinkles before the chocolate dries.

(Healthier) Cream Cheese Frosting

Another option would be a delicious (healthier) cream cheese frosting! To make this, all you need is about a 1/2 cup of cream cheese, 1/4 cup of plain Greek yogurt, a few tablespoons of honey (or maple syrup), and about a teaspoon of vanilla. Then just whip everything together with a mixer until it’s all combined and creamy. You could also add 2 or 3 drops of pink food coloring to the frosting as well. Then just frost your cookies and add fun sprinkles! If you don’t want to make your own frosting, store-bought works great too!

Ingredients

  • 2 cups almond flour
  • 1/2 cup coconut flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup grass-fed butter, softened to room temperature
  • 1/4 cup coconut oil, melted and cooled
  • 1/4 cup sugar
  • 1/4 cup baking Stevia
  • 1 egg
  • 1 1/2 tsp vanilla extract

For the Chocolate Glaze:

  • In a medium bowl, whisk together almond flour, coconut flour, baking soda and salt; set aside.

  • In the bowl of your stand mixer (or you could use a hand mixer), cream together butter, coconut oil, sugar and Stevia. Then add the egg and vanilla, mixing until combined.

  • While the mixer is still running, slowly add the flour mixture to the creamed ingredients cupfuls at a time until all combined.

  • Form the dough into a ball and wrap with plastic wrap. Chill the dough in the fridge for at least one hour, but best overnight.

  • Preheat oven to 350 degrees F and line two baking sheets with parchment paper silpat baking mats.

  • Roll out the dough between two pieces of parchment paper to about 1/4″ thickness and cut into shapes. You will need to continually roll out the dough so if it gets too sticky you can place the dough back in the fridge (or freezer) to chill again so that it’s easier to roll out.

  • Transfer cookies to baking sheets and bake in the oven for 10 to 13 minutes, until slightly golden. Allow cookies to cool completely on a wire rack before decorating.

  • While the cookies are cooling, add the chocolate and coconut oil to a small microwavable-safe bowl and melt in the microwave in 15 to 30 second intervals (mixing each time) until you reached the desired consistency. Dip the tops of the cookies into the melted chocolate and immediately top with sprinkles. Enjoy!

Notes

*To store the cookies, make sure they are cooled completely and the chocolate has dried, then layer them using parchment paper in a sealed airtight container. Cookies will last up to a week, but are best the first few days after baking.

*You can also freeze these sugar cookies (unfrosted) for up to 3 months and simply thaw them out before serving.
