Instructions

  • In a bowl sift together the flour, corn starch and salt. Mix lightly to combine.

  • In the bowl of a mixer with a paddle attachment, add the butter and sugar. Mix until a creamy consistency.

  • Continue mixing and add the eggs, one at a time. Scrape down the side of the mixer bowl if necessary.

  • Next add the vanilla and mix again.

  • Add the dry mixture to the mixer bowl. Mix to combine completely.

  • Break the dough into two sections. Flatten each on a piece of plastic wrap, cover dough disc completely and refrigerate.

  • Preheat the over the 375 degrees F. Prepare a baking sheet with parchment paper and set aside.

  • Once the dough disc is chilled, removed from the plastic wrap. Roll it out on a floured surface.

  • Use a small to medium circle cookie cutter to cut out the sugar cookie shapes.

  • Place the sugar cookies on the prepared baking sheet. Bake for 11 to 13 minutes until lightly golden.

  • Remove baking sheet from the over and let cool for a few minutes. Carefully place the sugar cookies on a rack to cool completely before decorating.

Tips for Decorating Valentine’s Sugar Cookies

Not everyone has the time to make difficult or overly fussy cookies. Also, everyone has their own comfort and experience levels working with icings and frostings.

These gluten free sugar cookies can be decorated however you wish. I like to frost cakes and get creative, so I made some with hearts and some with sprinkles.

I used pink, red and white icing because they’re for Valentine’s Day. You might like to work with similar shades or just stick with one colour. Red with pink might not be the greatest fashion statement, but they go perfectly on gluten free Valentine’s cakes!

If you are making your own icing, you will need some food colouring to get the colours you want. Alternatively you can buy ready-made coloured icing.

Bear in mind if you make your own, always make extra! Make more than you think you need because if you happen to run out, it can be very tricky to replicate the exact same colour.

Covering the top of a cookie with icing is also known as ‘flooding’ and this is pretty easy. Pipe the outline first, then fill it in. Are you adding another heart on top? Make sure the base layer of icing is fully set first and that may take several hours. Don’t rush for best results.

To help decorate these cookies, I am using a decorative scribe tool which is a great investment if you are going to be regularly decorating cookies.

Another clever idea, if you aren’t confident making shapes from your icing, is to get some edible food markers. These allow you to draw on hearts, stars or anything else you want to add to your gluten free sugar cookies. However you choose to decorate your Valentine’s sugar cookie batch, they are sure to taste amazing.
