I like to serve this with my other favorite sides like Green Beans Casserole, Mashed Potatoes, Dinner Rolls, Creamed Corn, Butternut Squash Mac and Cheese, Creamed Spinach, Green Bean Almondine, Acorn Squash, and ofcourse my favorite Thanksgiving desserts, beside our traditional Pumpkin Pie

During Thanksgiving I love to cook the same age old recipes which are somewhat forgotten right now. I somehow managed to go through some old diaries kept in the storeroom and after a lot of hard work, managed to scour through two torn pages of recipes.

Somehow, I tried to make sense of it and then got this recipe out of it. I love to use my Grandma's recipes as much as I can. Have you tried my Grandma's Apple Crumble?

What do you need to make Grandma's Sausage Herb Stuffing?

You don't need to look far and wide for the ingredients of this recipe. In fact, most of them should already be available in your kitchen's pantry.

As for the rest, you can easily find them at your home's nearest grocery store.

1. French Bread- Preferably a day old. You can also use store-bought unseasoned stuffing cubes. These make it so much easier to make the stuffing.

2. Sausages- You can use Italian Sausages which have casings removed for this recipe.

3. Butter (unsalted)- A whole stick of butter for that perfect taste of butter and herbs

4. Celery- For the veggies

5. Carrots- Added veggies for the stuffing

6. Onions- helps flavor the stuffing

7. Fresh Thyme- for that amazing herby aroma

8. Freshly chopped Flat Leaf Parsley- fresh and delicious

9. Fresh Rosemary- You cannot think of Holiday food without some Fresh Rosemary

10. Dried Cranberries- Gives a wonderful sweet touch to this amazing side.

11. Chicken broth- to bring everything together

12. Eggs - Helps in binding and also gets the stuffing edges crispy.

13. Freshly chopped Sage - for the burst of fall flavors

How to make Grandma's Sausage Herb Stuffing

STEP 1: TOAST THE BREAD

  • Preheat the oven to 350F
  • Lay the chopped Bread in a single layer in the sheet pan
  • Toast for 10 minutes or until absolutely dry

Once that’s done, take it out of the oven and set it aside for now. We will get back to it soon!

STEP 2: COOK THE SAUSAGES

  • Heat Olive Oil in a skillet. As the oil shimmers add the Sausage and cook until it gets brown-ish. Once cooked, remove from the skillet and keep aside

STEP 3: SOFTEN THE VEGGIES

  • Melt butter in the same skillet
  • As the butter melts, add the Chopped Onions, Garlic, Carrots and Celery. Also add the Herbs. Toss to combine everything and cook for about 3-5 minutes and once the veggies soften, remove from the heat.

STEP 4: COMBINE EVERYTHING

  • Combine the toasted bread, browned sausages and softened veggies in a large mixing bowl
  • Pour the Chicken Broth, Dried Cranberries and Beaten Egg in it
  • Toss to combine everything
  • Transfer to a baking dish

STEP 5: BAKE

  • Bake for 30-35 minutes or until the edges turn golden brown.
  • Once its baked, its ready to be served.

INGREDIENTS

  • 16oz 450gm French Bread cut into 1 inch cubes (possibly a day old)
  • 1 lbs Italian Sausages casings removed
  • 1 stick Unsalted Butter
  • 1 cup Chopped Celery about 3 stalks
  • 1 large Yellow Onion finely chopped
  • 1 medium sized Carrot finely chopped
  • 4 cloves Garlic minced
  • 1 tablespoon Fresh Thyme Chopped
  • 1 tablespoon Fresh Rosemary Chopped
  • 1 tablespoon Fresh Sage Chopped
  • ½ cup Fresh Parsley chopped
  • 3 cups Chicken Broth low sodium
  • 1 cup Dried Cranberries optional
  • 1 large Egg whisked
  • ¾ teaspoon Salt or as per taste
  • ½ teaspoon Ground Black Pepper
  • 1 tablespoon Olive Oil

INSTRUCTIONS

  • Preheat the oven to 350 F or 180 C and line a sheet pan with Parchment Paper.

  • Place the Bread cubes in a single layer in the sheet pan. Bake for about 10 minutes or until they dry out. Once the bread gets dry, transfer to a large bowl.

  • Heat olive oil in a saute pan. As the oil shimmers, add the Sausages. Break the Sausages and cook for about 5 - 10 minutes or until they are no longer Pink. Add this to the toasted Bread cubes.

  • In the same pan, melt a stick of butter. As the butter melts, add the chopped onions, chopped Celery and minced Garlic. Saute for 2 minutes. Add the herbs - Sage, Rosemary, Thyme and Parsley and toss to combine. Season with Salt and Pepper and cook for 10 minutes over low heat. Transfer to the large bowl.

  • Mix this with the chicken broth, dried cranberries and beaten egg. Toss to combine everything with the Bread mixture until the moisture is absorbed.

  • Pour this to a 9x12 inches baking dish. Bake for 30 -35 minutes or until it is browned on top. Serve this warm.
