Make your morning easy with these sensational breakfast casserole recipes. They’re all winners in my book, but this ham and cheese hashbrown breakfast casserole is the best!

Ingredients

  • 1 tablespoon olive oil

  • 1 small onion, finely chopped

  • 1 red bell pepper, finely chopped

  • 2 cups diced ham

  • 4 cups frozen hash brown potatoes, thawed

  • 2 cups shredded cheddar cheese

  • 8 large eggs

  • 1 cup milk

  • 1 teaspoon salt

  • 1/2 teaspoon black pepper

  • 1/2 teaspoon garlic powder

  • 1/2 teaspoon paprika (optional)

  • fresh chives or parsley, for garnish (optional)

Instructions

  • Preheat the oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish with cooking spray or butter.
  • Warm the olive oil in a large skillet over medium heat. Add the chopped onion and red bell pepper and sauté for 3-4 minutes or until tender and slightly caramelized.
  • Remove the skillet from the heat and set aside.
  • Optional: cook the diced ham for a few minutes with the onions to give it a crispy edge.
  • In a large mixing bowl, mix the thawed hash browns, diced ham, 1 1/2 cups of shredded cheese, and the sautéed onions and peppers. Stir well until combined.
